Crockpot Pork and Gravy

Super Easy! Super Good!

1. In the morning put a 1 to 3 lbs pork loin in the crock pot.

2. In a bowl, mix together a can of cream of mushroom soup, a can of golden mushroom soup, and a can of french onion soup.

3. Pour soups over pork.

4. Cook on low till ready to eat (meat will be tender, soups will make a yummy gravy).

5. Make some mashed potatoes (we use instant which takes about ten minutes)

6. Put mashed potatoes and some pork on each plate, top with gravy.

Fried Sheepshead

1. Catch a massive Sheepshead like I did (see the post 2 posts below this one).

2. Get your father-in-law to filet the Sheepshead.

3. Cut one of the filets into big ole nuggets.

4. Heat some peanut oil.

5. Dip and coat the nuggets in flour seasoned with salt, pepper, garlic powder, and paprika.

6. Beat a couple of eggs in a bowl with a fork and dip the nuggets in the egg.

7. Dip and coat the nuggets in cornmeal.

8. Fry the nuggets in the oil.

9. Eat.

Delicious.

Sheepshead A La Fic

1. Catch a massive Sheepshead like I did (see the post directly below this one).

2. Get your father-in-law to filet the Sheepshead.

3. Open the large box of fruit that your real estate agent gave you for Christmas.

4. Remove 3 large oranges and slice them in 1/4 inch thick slices.

5. Start the grill on low and cover it with the orange slices.

6. Brush the Sheepshead filets with olive oil and season w/ salt and pepper.

7. Place the filets on the oranges and grill.

8. Eat.

Best Chicken Pizza

Cyndy said this is the best Pizza I have ever made.

1. Grill chicken one night and grill 2x what you will eat.

2. The next night, put sauce on a pizza dough (We use random spagetti sauce from a jar).

3. Cut up the left-over chicken and put it on top of the sauce.

4. Cut up a whole lot of fresh cilantro and put it on top of the chicken.

5. Top with mozzarella.

6. Top the Mozzarella with diced onion and peppers (Any kind of peppers will do. We used pablano, wusses could use green pepper).

7. Bake the pizza.

Eat It Up - Yum!

Watermelon Margarita

This year we went to Edisto beach, South Carolina for the week of 4th of July. The beach was so hot this year that we would stay in the water most of the time. That is why there were so many people in the water for shark-guy(link) and why he made many of us so mad.

In the middle of the day it is too hot for humans to be on the beach. We go inside, eat lunch, take naps, go to the store, etc, and then maybe go back out to the beach right before dinner.

Well my parents had a bunch of family and friends over July 3rd and some of them wanted to go out on the beach about 1:00 pm. I walked them out onto the beach and showed them where we had left our stuff. The beach was full of people. There must have been an ozone layer hole right above us or something. It was so hot and bright that I could not see more than a few feet in front of me before a dense sun-fog obscured everything.

I ran back inside and grabbed one of the seedless watermelons that Uncle Sam had brought and cut it into inch thick slices and cut out the good part.

I placed the watermelon slices in a single layer on a cookie sheet and put them in the freezer.

When the watermelon was good and frozen (several hours later), I took it out of the freezer and sliced it and crammed about half of it into a blender until the blender was full.

I added some tequila, sugar, lime juice, and fresh mint and mixed it up in the blender until the watermelon was slushy.

I grabbed some glasses, dipped the rims in lime juice and then sugar, and filled the glasses with watermelon margarita .

I used the rest of the frozen watermelon and made another pitcher.

Blackberry Pie

We have a "common area" behind our new house. I call it a "common area" but it could just as easily be called a "tall weed area with drainage ditches".

In this common area grow wild blackberries. We have been picking them and the ones that I can keep Sam from eating immediately, I have been saving in a container in the refrigerator. I finally saved up 2 cups of wild blackberries and made a pie.

The pie actually looks better than it tasted, but it does compliment vanilla ice cream quite well.

Himym Chicken

My newest creation. Sorry, no photo, but it looks good.

Saute fresh spinach and garlic in olive oil.

Flatten some boneless chicken breasts and place equal amounts of spinach/garlic on each piece of chicken.

Crumble some feta cheese on each piece of chicken.

Roll up each piece of chicken and wrap a piece of bacon around it.

Place the chicken in a single layer in a casserole with lid.

Cut up green onions and grape tomatos and scatter them around the chicken.

Melt a little bit of butter in the microwave in a coffee mug. Add 1 cup or more Chardonay to the butter and then pour over the chicken.

Cover and bake at 400 degrees for 40 minutes.

If bacon isn't fully cooked after 40 minutes, remove lid, add more chardonay (if needed for sauce) and cook till bacon is crispy.

Eat chicken over pasta or wild rice with onion/tomato/wine sauce.

My Crock Pot Chicken.

Trust me on this, I am a Crock Pot Master.

Cut up some carrots and place them in the crock pot.

Get a chicken. Remove all the junk inside it and wash it and dry it.

Loosen the skin on the chicken with a knife and place fresh basil or rosemary under the skin and in the cavity of the chicken.

Rub butter all over the outside of the chicken and sprinkle with salt and pepper.

Put chicken in crock pot, breast up, on top of carrots.

Add 1/2 white wine, 1/2 water until liquid just covers the carrots.

Cook on low all day. Eat with rice.

Best Jalapenos

Isn't the Superbowl this weekend? I couldn't care less about the NFL, but I do have a great recipe for anyone throwing or going to a Superbowl party.

1. Take a bunch of jalapenos.

2. Cut them in half from end to end and de-seed.

3. Stuff each jalapeno with cream cheese. (Use a lot of cheese. the two sides of the jalapeno need not even touch from all the cheese.)

4. Wrap each jalapeno with a half a slice of bacon.

5. Put the jalepenos on a cookie sheet and broil until the bacon is fully cooked, crisp.

6. Eat.

Pasta Poblano


This is what a poblano pepper looks like. I grow Poblanos in my garden and have a huge ziplock full in the freezer. Poblanos are a little hot, but not like jalapeno hot.

Pasta Poblano

1 lb Uncooked linguine
2 to 4 Poblanos (depending on size)
1 clove garlic, minced
1 Onion, chopped
1 cup whipping cream (or lighter cream)
2 tbs butter
salt and pepper to taste
4 oz shredded mozzarella

De-seed the poblanos and cook them, with the pasta, al dente, in a big pot.

Drain pasta and remove poblanos.

Put poblanos in a blender with garlic, onion, and cream. Puree

Melt the butter in a large saucepan over medium heat, then add blended sauce and salt and pepper. Cook 5 minutes.

Stir in cooked and drained pasta and mozzarella. Cook 10 minutes.

Serve topped with grilled chicken.

How to Fry a Turkey

I have been frying turkeys for almost 10 years and have found that this is the best and tastiest way to fry a turkey:

1. Get a turkey frying kit.

2. Get a turkey between 11 and 21 lbs.

3. Put wrapped turkey in pot and stand on its end. Cover with water. Remove turkey and mark the height of the water. Dump out water.

4. Thaw turkey, remove all junk from inside turkey and wash and dry it.

5. Inject the turkey with an entire small bottle of Franks Red Hot sauce. Concentrate on the breast and always pull the injector out as you inject so as to evenly distribute the Franks.

6. Mix together 1 part pepper, 1 part paprika, 1 part (celery, onion, or garlic) salt. Rub entire surface of turkey with that mixture.

7. Fill pot to mark you made earlier with peanut oil.

8. Heat oil to 400 degrees.

9. Slowly lower turkey, legs up, into pot. Temperature of oil will drop.

10. Cook turkey at around 350 degrees for 3.5 minutes a pound.

11. When done, remove turkey, drain, carve, eat. (Turkey is done when leg will pull off easily and liquid at joint is clear)

Jambalaya

I am a master crock-pot cook. Last week I made terrific Jambalaya (pictured at left) with tomatoes and peppers from our garden.

Here is how: Cut up raw chicken and sausage and put in crock-pot. Add diced tomatoes and finely chopped hot peppers. Add bay leaf, cumin and enough beer to barely cover other ingredients. Cook on low all day and serve over rice.
